Stuffed Vine Leaves with Olive Oil

Usually made with vine leaves and broken rice, stuffed vine leaves (sarma) are among the dishes inherited from Ottoman cuisine. As one of the main dishes of Elazığ, sarma is a staple on the table with its carefully wrapped leaves and flavorful filling.

Ingredients:

  • 4–5 onions, finely chopped

  • 1 Turkish tea glass (approx. 100 ml) Olivvi extra virgin olive oil

  • 1.5–2 tablespoons pine nuts

  • 2 cups rice

  • 1 tablespoon dried mint

  • 1.5 teaspoons ground black pepper

  • 1 teaspoon ground cinnamon

  • 2 sugar cubes

  • 2 tablespoons currants

  • 1 cup finely chopped parsley

  • 1 teaspoon salt

  • 21 Turkish tea glass hot water

  • 500 g pickled vine leaves

  • ½ tea glass Olivvi olive oil (for drizzling)

  • 2 cups boiling water

  • Juice of half a lemon
