Usually made with vine leaves and broken rice, stuffed vine leaves (sarma) are among the dishes inherited from Ottoman cuisine. As one of the main dishes of Elazığ, sarma is a staple on the table with its carefully wrapped leaves and flavorful filling.
Ingredients:
4–5 onions, finely chopped
1 Turkish tea glass (approx. 100 ml) Olivvi extra virgin olive oil
1.5–2 tablespoons pine nuts
2 cups rice
1 tablespoon dried mint
1.5 teaspoons ground black pepper
1 teaspoon ground cinnamon
2 sugar cubes
2 tablespoons currants
1 cup finely chopped parsley
1 teaspoon salt
21 Turkish tea glass hot water
500 g pickled vine leaves
½ tea glass Olivvi olive oil (for drizzling)
2 cups boiling water
Juice of half a lemon
