Green Beans in Olive Oil

A staple of Turkish home cooking, zeytinyağlı taze fasulye (green beans in olive oil) is a refreshing summer dish. Served cold, it's appreciated for its simplicity and the rich aroma of olive oil.

 

Ingredients:

500 g fresh green beans (trimmed and halved)
1 onion (thinly sliced)
2 tomatoes (peeled and grated)
1 tea glass of olive oil
1 tsp sugar
1 tsp salt
½ cup hot water
 

Instructions:

1. Heat the olive oil in a pot and sauté the onion until soft.
2. Add the grated tomatoes and cook for 2–3 minutes.
3. Add the green beans, sprinkle with salt and sugar.
4. Pour in the hot water, cover, and cook over low heat for about 35–40 minutes until thebeans are tender.
5. Let cool at room temperature, then chill in the fridge. Serve cold.
