One of the most beloved olive oil-based dishes in Turkish cuisine, zeytinyağlı enginar(artichokes with olive oil) is especially popular in the Aegean region. It’s known for itslightness, nutritious ingredients, and elegant presentation.
Ingredients:
• 5 cleaned artichoke bottoms
• 1 carrot (diced)
• 1 potato (diced)
• 1 tea glass of peas
• 1 onion (finely chopped)
• ½ tea glass of olive oil
• 1 tsp sugar
• 1 tsp salt
• Juice of ½ lemon
• 1 cup of water
Instructions:
1. Heat the olive oil in a wide pot and sauté the onion until translucent.
2. Add diced carrots and potatoes, sauté for a few more minutes.
3. Place the artichokes in the pot and fill their centers with the vegetables and peas.
4. Add sugar, salt, lemon juice, and water.
5. Cover and cook on low heat for about 30–35 minutes until tender.
6. Cool to room temperature and refrigerate before serving cold.
